Our Costa Rica 80% chocolate is crafted from exceptional fermented fine cacao grown at Hacienda Dos Lagunas, a long-term agroforestry project led by Adrián Rossi in the Limón region of Costa Rica.
This cacao is a blend of TSH-565 and ICS-95 Trinitario clones, varieties carefully selected for their ability to thrive in this tropical terroir and for their remarkable aromatic complexity. Grown at 380 metres above sea level and harvested by hand, every step — from soil regeneration to fermentation — is done with intention and respect for the land.
Adrián’s project began in 2017 with a simple but powerful idea: healthy soil creates better cacao. By restoring degraded land through agroforestry, growing vegetables and bananas as green fertiliser, and planting cacao only once the ecosystem was ready, Dos Lagunas has become a model for sustainable fine cacao production.
Fermentation is closely monitored using cascading wooden boxes, achieving an average 76% fermentation rate over 7 days, followed by 17 days of slow drying on raised beds. The result is a cacao with clarity, balance and depth — cacao that speaks clearly of its origin.
